Goddamned Zucchini

I have so much frikkin zucchini I don't know what to do with it. I baked a loaf of zucchini bread Saturday, and shredded enough for 3 more loaves that I froze. There are 7 more good sized ones that I need to do something with. At least they keep for a long time.

I got my first red tomato today!! I am eating it with lunch tomorrow, for sure!!

slice it in spears and make fajitas. that's what I did when our garden produced a lot.

Of course in Texas we make everything into fajitas.

Missy, I think there might. At least they are always talking on NPR about some organization that does that...but I've never looked to see if they are in our area.

Might bring some in to work for people...there's been a lot of that lately.

Amy, this is one recipe I like to make with zucchini: http://www.epicurious.com/recipes/food/views/Zucchini-Sun-Dried-Tomato-and-Mozarella-Tart-109567. Though it doesn't use much zucchini, it is really good - I just use pie crust and whatever cheese I have around as a variation on the recipe. It usually needs a little more egg mixture for me, I guess my tart pan is kindof big. I would layer the zucchini up too, so you get rid of more : )
